Possible Issue???

2011 1198SP WITH 2k miles. Noticed this after a hard ride in the Mtns. I noticed the moisture, is this the start of a leak? ... Possibly coolant

Yep - the crankcase oil breather. A bit of oil here after a hard ride probably isn't great cause for concern.
Mine broke a breather reed valve early on (replaced under warranty of course) but that leaked more oil than that.
Sustained high revs will cause a fair bit of pressure in the (plastic) breather housing.

Do they make metal housing that will handle the pressure better and stop this?

Breather issues were a not uncommon problem with the 996/998. It's been a time since I'd had one but I recall a metal aftermarket part being available. Maybe Nichols made it... and yes... somehow all these years later I somehow remember that:
