you would only need a 5mm spacer to go from 320mm to 330mm disc, as you are moving the caliper out from the center of the axle (radius) which is half the diameter distance.

I have had great results with galfer, EBC, Braking, and Brembo rotors. I too prefer steel rotors with sintered pads EBC gpfa I think it is for track only.
