I'm curious about what else people are finding for the 821s. I think that some of the accessories available for the 1200 would be suitable but others, no.

I want adjustable shorty levers… The only ones I'm seeing out there so far are these, which are beautiful but essentially $300. They do say that it works for the Hypermotard also, so I'm wondering if I could go to another site and search for the Hypermotard and be good to go…?

Anyone put a tank protector on there yet? If so, I'd love to see it.

Correct, only some items cross over. There are quite a few differences between the 821 and 1200.

We also offer Ducabike levers at $250. They have adjustable reach and are folding: Ducabike Ducati Hypermotard & Monster 821 Brake & Clutch Lever Set: L07

There aren't many levers out yet since the 2014 Hypermotard was the first Ducati to use a cable clutch and the M821 is the second. So levers for all previous Ducati models don't work on these bikes.
