Not easy these days to find the help you need in Adelaide. Of course, being an insurance job you will need to go through a dealer - at least initially.
You only really have Italian Motorcycles as an authorised Ducati dealer now, and The Bike Factory in the city, who are no longer an official dealership ( a bit of a story to this one..).
But the Bike Factory may be able to get your bike back to you quicker, being a less busy shop. And they have been there, specialised in Ducati, since 1975. But Mike - the owner of Italians - is also a good guy. I'm thinking an estimate of time is the main thing at this time of year.
Maybe go and see both shops and choose from there.
If you decided to fix it yourself (if the insurance company is open to that) I can help with tips re getting paint and repairs done. But even some of that is getting harder here these days.
But getting two quotes from shops is your first step. Then discuss your options with your insurer and take it from there.
I hope you are back riding before long. A good time of year to be riding in Adelaide! I'm loving it.
