I like to sneak up to the torque by hand and then finish it with the torque wrench. If I apply the wrench and it immediately "breaks", I loosen the fastener a bit and try again.

Using feel for non critical fasteners is one thing, not knowing the approximate specified torque is more worrisome.

And at the end of the day, if you don't feel comfortable with the work the mechanic is providing, find a new one.
