I was told by the dealer to user 89 (im from the states). Now i know the manual calls for 91-93Oct. They told me to use 89 due to carbon build up over time that for some reason these engines don't burn up the ethanol which causes carbon build up.

One size does not fit all apprently,

To answer your question I use premium (In Washington state that's 92 octane in my 848), I've read enough to come to the conclusion the opinions are vast and with out data I'm sticking to what the owners manual says...

Keep in mind that there are 4 different octane rating methods, ron, mon, aki and something else I can’t recall right now.
If the manual doesn't specifically list it as ron+mon/2 or aki then it is referring to ron rating. 95 Ron is 90 by the US standards.
So these two screenshots from the manual are exactly the same.

Hmmm....I've been using 93 octane (10% ethanol) since I bought the bike. However since I've moved from MA to NY and found a few stations that carry 91 octane (100% pure), I'm thinking that's the better way to go. It may not make much or any difference, though. Thoughts?

Not having Ethanol in the fuel makes a big difference...not really that much in regards to power etc. but more so in being better for some of the parts of your engine...
