mine comes on at 104 and then off again at 98.

 

Mine comes on at whatever temp I set it to.

From what I understand they should kick in at about 221º F

 

Mine comes on at 217° F.

 

Mine come on at 105c and off at 100c

In summer I feel like a roast chicken and in winter or when its raining... steamed duck!

If you haven't resolved this yet, it sounds like the fan relay no longer works. The fans should have turned on prior to 250 degrees.
I recently had my 1098 idling in my garage while I was fiddling with map settings, and didn't know I had an issue with my cooling fans until it started spitting coolant all over the garage floor. I looked at the gauge panel, and sure enough - the temp was 260-ish and the fans were NOT running. I took it into the dealer and they confirmed the fan relay was dead. Full of corrosion. They replaced it, and the starter relay which sits right next to it because they say it eventually fails for the same reason. Haven't had any cooling issues since.
